Ruby Tuesday's Southwestern Corn Salsa

Corn, canned, drained.......1 10# can
Tomatoes, diced 1/4" x 1/4".....6 cups
Green Pepper, diced 1/4" x 1/4" 1-1/2 cups
Red Pepper, diced 1/4" x 1/4"....1-1/2 cups
JalapeƱos, diced 1/4" x 1/4".....2/3 cups

Dressing:

Vegetable Oil........1-1/2 cups
Lemon Juice.......1/2 cup
Cilantro, fresh, chopped......3/4 cup
Cumin.....1 TBL
Salt.....1 TBL
Pepper.....1-1/2 tsp

Directions:

Mix vegetables, combine with dressing.

Yield: 2 gallons
